Fruity Delicious Bites

Makes 30 small bites

Ingredients

2 cups of pitted Medjool dates

2 cups of pecans

1 teaspoon vanilla extract

1 pint of blueberries

1 pint of raspberries

6 large kiwis, peeled, sliced, and chopped

Directions

In a large food processor combine dates and pecans and blend until finely ground. Add vanilla extract and mix well. Mixture sure be sticky and form small balls when you roll them in your hand.

Add about ¼ cup of mixture to a small cup and press to flatten. Top with blueberries, raspberries, and kiwis.

Cover and refrigerate. Bites stay fresh for one week in the refrigerator. Use as a delicious energy bite for your active and busy lifestyle.
